Dessert First

Good Afternoon!

I’m having a very relaxing Saturday here in Columbus.  I just finished dominating this bowl of spaghetti squash for lunch…

About 1/4 of a spaghetti squash, Classico Tomato & Basil marinara sauce, Lightlife’s Gimme Lean sausage style crumbles, fat free mozzarella & a sprinkle of parmesan.  So good.

(Side Note: Spaghetti and marinara sauces tend to be high in sugar.  Classico Tomato & Basil sauce is delicious and only has 4g sugar per 1/2 cup serving. )

What I’m really excited to share with you though, is what I ate for breakfast this morning…

Berry Cobbler Baked Oatmeal

Serves 1

  • 1/3 cup oats
  • 1/3 cup water
  • 1/4 t cinnamon
  • 1 packet sweetener (I used Sun Crystals)
  • 1 cup of frozen fruit (I used a combination of: blackberries, sliced peaches, tart cherries and blueberries.)
  • 3 egg whites
  • Sugar free maple syrup: optional.
  1. Preheat oven to 350*
  2. Mix oats, water, cinnamon and sweetener and microwave for about 1 minute.
  3. Defrost berries in microwave.
  4. Add egg whites to oatmeal mixture and stir well.
  5. Spray a small glass ramekin with non-stick spray.
  6. Add berries and top with oatmeal.
  7. Bake for 30 minutes.
  8. Top with sugar free maple syrup if desired.

It reminded me of a cross between berry cobbler and french toast.  And it is my new favorite way to eat oatmeal.  Too bad I’m about to be oven-less in a couple of weeks at school…I guess this will have to be reserved for weekend breakfasts at home!

After breakfast I lounged around my house until deciding I needed to do something with myself.  I threw on my workout clothes, drove to my gym and then….got sidetracked.

That’s right folks, my gym is conveniently located next to Target.  For my spending pleasure…

I perused the aisles for quite some time.  I found leggings to work out in for $5 each…score!  Compared to $21.99 a pair for the leggings in the workout section.  Call me cheap, I prefer resourceful. 

And don’t worry (I know you were) after Target, I made it to my original destination.  I kept my workout easy today and just did some cardio.  It matched yesterday’s cardio workout exactly except I did 40 minutes instead of 30 and called it good.

I’ll be going now, I have a few episodes of The Secret Life of the American Teenager to finish watching on Hulu.  I personally can’t think of anything that would make this Saturday any better.

…Okay, maybe some more french toast/berry cobbler oats…

  1. baked oatmeal sounds AMAZING!!!!! i have to give that a try someday when i’m not at work or wanting to eat pronto haha

    • Haha– that’s my problem too. Usually I don’t plan ahead…when I’m hungry, I’m hungry NOW. But this is worth the pre-planning!
